菜系:四川菜 原料/调料: 水发鱿鱼200克,熟猪油50克,化鸡油100克,火腿25克,熟鸡肉500克,水发兰片25克,时菜100克,上汤l杯,胡椒面、料酒各少许,鸡油、葱白适量。
制作流程: ①水发鱿鱼(选用大张无碱味的水发鱿鱼)放入上汤中煨起,火腿、鸡肉、兰片切1.5寸长的丝。葱白切成1.5寸长的段。 ②烧热锅,下熟猪油烧至五成熟时,先下葱段炒出香味,再加入火腿、鸡肉、兰片略炒一下,加上汤、盐、料酒、胡椒面烧入味,再下时菜煮熟,捞出各料摆入碟内。 ③将煨过的鱿鱼捞出,在锅内烧一下,捞入碟中盖面,汤汁中下味精、生粉水勾芡,加鸡油起锅,淋在鱿鱼面上即可。
